Ok Miss Amy... Ever since the day that you sent me the Brownie Girl Scout picture from back in the day, Lauren has been trying to perfect your "Fish Face".
She is finally ready to show it to you... Here she is (crossed eyes & all!!)
Today we had our Girl Scout Thinking Day Celebration!! We have been looking forward to this for quite some time now!! We represented Ireland. We learned about Leprechauns, Merrows & Mermaids and fairies which the Irish call Sidhe (pronounced shee).
We served out Irish Soda Bread and everyone loved it!! We dressed in red & blue in the uniforms of the Irish Girl Guides (the girl scouts abroad). We had a great time!!
PS I have no idea why Lauren made that face, she was having a blast...
This is what we made at our house today with our Girl Scout troop for our thinking day celebration coming up!! Enjoy!!
Irish Soda Bread with Raisins
Nonstick vegetable oil spray
2 C all purpose flour
5 Tbsp sugar, divided
1 ½ tsp baking powder
1 tsp salt
½ tsp cinnamon
¾ tsp baking soda
3 Tbsp butter chilled and cut into cubes
1 C buttermilk
1 C raisins
Preheat oven to 375 degrees. Spray an 8-inch diameter cake pan with nonstick spray. Wisk together flour, 4 Tbsp sugar, baking powder, salt, cinnamon and baking soda in a large bowl to blend. Add butter. Using fingertips, rub in until a course meal forms. Make a well in the center of the flour mixture. Add buttermilk. Gradually stir dry ingredients into milk to blend. Mix in raisins.
Transfer in to the prepared pan. Sprinkle dough with remaining Tbsp of sugar.
Bake bread until light brown and tester into center comes out clean, about 35 minutes. Cool bread in pan 10 minutes. Transfer to rack. Serve warm or at room temperature.

This Too Cute Tuesday picture is of Ethan riding on Daddy's shoulders at Northtown Mall on Saturday. Ethan is clearly pooped out & ready to get out of there!! He was about one lullaby away from falling asleep on Brad's head.

Today, Lauren & I got to go to the bridal shop to try on dresses for Andrea's wedding!! We had such a great time!! I was sooo surprised, but in less than 2 hours time, we were able to pick out Bridesmaids dresses and find & purchase Laurens Flowergirl dress!!

Happy Valentines Day!!
Today Brad surprised me with a card & the most beautiful tulips!! Lauren was a bit jealous. Grandpa Steve saved the day (and surprised the heck out of her) when he showed up at Grandma Maish's with a beautiful bouquet of flowers just for her!!

Tonight was Coon Rapids Wrestling Alumni Night!! We try to get to this every year that we can!!

Today was Laurens 100th day of school!! Can you believe it?? I was able to go in to her school & help with their 100th day Celebration. Ethan even came with me & he was sooooo good!! He sat in his stroller the whole time (like 2 hours) and ate his snack & watched the big kids do their thing!
They had set up 10 stations, each with a fun activity and fruit loops. Yes, fruit loops (and they were safe for Lauren, so she got to do a food activity with her class & she was really excited!). They had to add a group of 10 items (smiley faces, stickers, pennies, fingerprints etc. ) to their 100th day sashes. They also had to count out 10 fruit loops per station, and add them to their 100th day necklace. At the end, they had 100 fruit loops on their necklace, and 100 items on their sashes! Then they got to decorate their 100th day crowns, and voila, their look was complete. Laurens teacher is so good at incorporating lots of learning into everything that they do. We are really lucky to have her in such a great class.
